  1. Well our season is in full swing and our students from Macedonia have arrived to work for the summer at our Southwest Harbor Inn. I'm Don and am one of the innkeepers of the Harbour Cottage. Welcome to our blog. The picture you see next to my name is actually Javier my fellow innkeeper as well as Dijana and Daniel who are here for their second year. I am on the far left and Javier is on the right. Daniel and Dijana are in the middle and work very hard to make The Harbour Cottage Inn the best bed and breakfast in Maine. (We try any way!!! Ha Ha!) We do pride ourselves in being a great Acadia b&b. Having just launched our blog we invite our guests to join in when they have things to share about their Acadia National Park vacation.
I thought I would share a new recipe we've been trying out as we work to provide our guests with the best Maine breakfast possible. Let me know what you think. These Irish Soda Bread muffins are simple delicious and not overly sweet.

    Ingredients:
    2 cups all purpose flower
    3TBS granulated sugar
    1 1/2 tsp baking powder.
    1/2 tsp salt
    1/4 cup butter
    1 cup buttermilk (low fat)
    1 large egg beaten
1 cup dried cranberries (or whatever fruit you choose)

    Preheat oven to 375F
    Mix all dry ingredients
Cut in butter and mix until the mixture resembles coarse crumbs
Mix buttermilk and egg in a separate bowl and stir into dry ingredients
Spoon batter into muffin tins (use paper muffin cups) and bake for 20 to 25 minutes. Cool for 5 minutes and serve with butter on the side. These are absolutely delicious. Come and stay with us when you can on your next Southwest Harbor Maine vacation.
